If you know me you know that I have always had a knack for baking and even attended cooking school for a short time. These lemon cookies are a family favorite around here, well except for my husband Levi who hates lemon. The rest of us love anything that contains sugar and is considered a dessert. I can remember my mom and grandmother making these cookies ever since i was a little girl and now i’m thrilled to share it with all of you! This cookie is a snap to make and will leave you wishing you had just a few more. Beware you might eat the whole batch… I just might have done this a time or two. So without further a do my very famous Lemon Cookie recipe!
LEMON COOKIE AMAZINGNESS!
1 1/4 cups flour
1/2 cup cornstarch
1/3 cup powdered sugar
3/4 cup of softened butter
1 Tablespoon fresh lemon juice
Combine all ingredients in a bowl, using a pastry cutter cut in the butter into the dry ingredients until a course crumble. Then use your hands and mix together until it resembles cookie dough. Next, use parchment paper or wax paper and roll dough into logs and wrap in the wax paper. Refrigerate for 1 hour until dough becomes firm. Remove wax paper and slice into 1/2 inch thick cookies and bake at 350 for 5-7 mins.
Frosting:
3/4 cup powdered sugar
1/4 cup softened butter
1 Tablespoon lemon juice
Mix frosting ingredients together in a small bowl until combine. (you can use half and half if the lemon juice isn’t enough to combine together) Frost cookies once cooled.
